ALKOOMI COLLECTION (formerly known as The BLACK LABEL)
The Jarrah Shiraz is only made in small volumes, using carefully selected premium fruit from our oldest Shiraz vines. Traditional fermentation in small open vessels, which are hand plunged 3 to 4 times daily, the 2012 Shiraz was then pressed off skins after extended skin contact. Malolactic fermentation occurred while maturing in 1/3 new French Oak followed by a maturation in barrel for 19 months.
Tasting notes:
Vibrant flavours of black cherry and licorice layered with an earthy, savoury, graphite mid palate interwoven with a core of gravelly tannins and a bright plum skin acidity.

The Muted aromas grow in the glass with a bit of a workout Tar, tapenade and darker fruit references. The varietal postcode is apparent, however, across the tail of pepper-
crusted acidity.
